Experience the rich, authentic flavors of Madurai with this mouthwatering Chicken Ghee Roast, crafted by 15-year culinary veteran Mr. Saravanan of Velavan Catering! This traditional recipe skips the usual base of onions, tomatoes, and coconut or cashew paste, relying instead on chicken marinated in curd, turmeric, and fine salt, cooked alongside a freshly roasted spice blend of whole coriander, fennel, black pepper, cinnamon, cloves, garlic, and dried red chillies.
Sautéed and simmered to perfection in pure, aromatic Milky Mist Ghee, the chicken turns golden, tender, and deeply infused with spice, creating a glossy, rich dish where the ghee beautifully separates. Effortless to make yet packed with flavor, it pairs seamlessly with piping-hot idlis, crispy dosas, pooris, or rotis, offering a first-class culinary delight for the whole family!
